
Country-style fish soup

To prepare fish soup, you need fresh crucian carp, onion, dill, potatoes, bay leaf, allspice, water, and vodka. For the seasoning, you need garlic, dill, pork fat, and salt.

It's no secret that the best ukha is made from crucian carp. So, let's take 2 crucian carps. Clean the fish—remove the gills and gut them. Wash, then dry with a paper towel.

Cut into portion sizes. Remove fins and bile. Under no circumstances cut into small pieces, otherwise everything will disintegrate into the broth, and you won't get to taste the juicy meat.

Place the fish in a pot. Add half an onion and dill sprigs.

Cover with cold water. Place over low heat. WARNING! Before boiling, pour 50 ml of vodka into the broth to give your fish soup a rich, vibrant aroma. Simmer for 20 minutes, skimming off the foam as it forms.

Ukha is not made from fish alone, so in the meantime, dice the remaining half of the onion. Peel, wash, and dice the potatoes.

Prepare the dressing. Finely chop dill, bacon, and two garlic cloves. Grind thoroughly.

After 20 minutes, remove the half onion and dill from the broth. Add potato and onion to the broth. Cook for another 15–20 minutes.

Add salt, bay leaf, and allspice. Cook for 5-7 minutes.

Remove the bay leaf. Add the dressing. Stir. Cook over heat for 1 minute.

Let the fish soup steep for 10-15 minutes. The fish soup is ready. Serve the fish soup for lunch.
