
Pumpkin soup with apples

A hearty first course. Today I will tell you, the soup is ready to serve.

Prepare the ingredients. Peel all the vegetables, and remove the fibrous inner part from the pumpkin. Cut a quarter of the pumpkin into small cubes, and chop the rest coarsely.

Coarsely chop the onion, garlic, and carrots.

In a non-stick saucepan, melt a piece of butter and sauté the vegetables over high heat. Then pour in the vegetable broth, add a little salt, and cook the soup for 20–25 minutes.

Cut the bacon into pieces of your desired size, and fry in a dry skillet with salt and ground black pepper. You can add some cayenne pepper if you like it spicy.

Peel the apple and remove the core. If the apples are small, use two. Cut into cubes and sprinkle with lemon juice to prevent browning.

Sauté the pumpkin and apples in the fat from frying bacon and pumpkin seed oil until cooked. At the end, add the pumpkin seeds and brown them for a minute.

When the vegetables are ready, remove the pot from the heat. Use an immersion blender to puree the soup.

Add spices, herbs, and cream. Mix well.

Pour the soup into bowls, add fried bacon pieces, apples, and pumpkin. Place a spoonful of sour cream on each and serve.
