Description

Pumpkin puree soup with processed cheese is a truly autumnal comfort dish that will win over everyone. Even if you've never tried puree soup before, this is the perfect one to start with. The soup turns out incredibly delicious. Ladle into bowls and serve.

    Prepare all the necessary ingredients. Peel all the vegetables and rinse them under running water. You can use any table pumpkin; its color may vary from bright orange, almost pink, to yellow.

    Cut the pumpkin into 8-10 mm thick slices. Place the pumpkin on a baking sheet lined with parchment paper and bake in the oven at 180°C for 20-25 minutes, until tender.

    In a saucepan where you will cook the soup, heat vegetable oil, add finely chopped onion, and sauté until soft. Then add grated carrot and minced garlic, cook for a few minutes.

    Cut the baked pumpkin into several pieces and also add to the pot.

    Then add the spices, salt, pour in the broth, place on the heat and bring to a boil. Cook the soup for a few minutes — then remove from the heat.

    Purée the finished soup with an immersion blender until smooth.
