
Pumpkin soup with chicken
Description
Pumpkin is a unique vegetable suitable for soups, main dishes, and desserts. It pairs well with other ingredients and is a rich source of numerous vitamins essential for both children and adults. Today we suggest trying a light pumpkin and chicken soup. 1. First, prepare chicken broth. Wash the chicken, remove excess fat and skin, and cut the fillet into small cubes. Pour 3 liters of water into a pot, wait until it boils, add salt, and put in the meat. Cook the fillet for 20–25 minutes. 2. While the broth is cooking, prepare the other ingredients. Peel and dice the potatoes. When the chicken is ready, add the potatoes to the pot. Cook for another 8–10 minutes. 3. In the meantime, dice the bell pepper and carrots, then sauté them in vegetable oil for a few minutes. 4. Add the sautéed vegetables mixture to the pot, along with chopped tomatoes. 5. Taste the broth, add salt if needed, and season with a pinch of ground pepper and one bay leaf. 6. Peel the pumpkin, remove the seeds, chop it as finely as possible, and add it to the soup last. As soon as the broth comes to a boil again, remove the pot from the heat and cover tightly with a lid. Let it sit for half an hour. The delicious, healthy soup is now ready. Serve with fresh herbs and sour cream.
