
Pumpkin soup with shrimp
Description
Hearty and aromatic soup. When colorful pumpkins are in season, don't miss making this delicious soup! You can use shrimp of any size and variety, but remember to sauté them and remove their shells, as well as the digestive tract in larger ones. Don't forget spices, seasonings, and herbs—they will give the dish a more vibrant flavor. You may also add garlic if you enjoy its aroma. In general, trust your culinary imagination and everything will turn out perfectly. Serve the soup hot.

Prepare the listed ingredients. Peel the pumpkin and thoroughly rinse it together with the green onions. You can substitute the green onions with onion or red onion. Defrost the shrimp and drain off any released liquid.

Preheat a saucepan with a non-stick bottom or a wok on the stove, adding vegetable oil. Slice the white parts of the green onions and add them to the pan. Braise for just 2–3 minutes until lightly browned.

Cut the pumpkin into medium or large cubes and add to the container. Mix and sauté for 3-4 minutes.

Pour in hot water, add the listed spices. Gently stir and bring to a boil, then reduce the heat and simmer for about 15-20 minutes.

Heat vegetable oil in a skillet and add the shrimp. Sear for about 2-3 minutes on one side until golden brown. Keep in mind that if the shrimp are large, they will require slightly more time over medium heat.

Flip them over to the other side using a fork or silicone spatula and cook for the same amount of time. Then transfer to a plate and let cool slightly. Next, remove the shells and discard the digestive tract, then rinse under water.

By this time the pumpkin will be fully cooked. Pierce a pumpkin cube with a knife to make sure it is soft.

Blend with an immersion blender for 3–4 minutes, making sure not to miss any pieces. Taste the soup and, if necessary, add a little more salt or sugar.

Chop the remaining green part of the onion. Pour the pumpkin soup into bowls, sprinkle with green onions, add drops of mayonnaise or sour cream, and drizzle with cream.
