
Pumpkin soup with garlic

Take a shallow saucepan, heat it, and add oil. Cut the onion into cubes and add to the saucepan, sauté until soft. Add chopped garlic and sauté for one to two minutes.

Cut the pumpkin into 1.5-centimeter cubes, sprinkle with salt, and add to the onion and garlic. Fry for about two minutes. Cover the pot with a lid and simmer over medium heat for ten minutes, until the pumpkin becomes soft.

Add broth or water, cover the soup with a lid, and wait for it to boil. Then reduce the heat and simmer for about 10 minutes. Remove the dish from the heat and transfer it to a blender container. Blend until smooth.

Once whipped to a puree-like consistency, transfer the mixture back to the saucepan and heat it. Add milk, salt, pepper, cumin or coriander, stir thoroughly, and bring to a boil. Simmer uncovered over low heat for about 5 minutes.
