
Tutmach abur
Description
Hearty and aromatic soup. Tutmach are small pasta pieces made from dumpling dough. If you don't have ready-made tutmach, roll out the dough 2 mm thick, then cut it into small squares measuring 0.5 x 0.5 cm. Dry them and store in a cool, dry place. Here's the recipe. Serve the soup hot.

Cut the chicken fillet (or breast) lengthwise into three pieces, then slice into thin strips.

Peel and crush the garlic with a knife.

In a saucepan, melt the butter and sauté the chicken fillet for 10 minutes. Add the garlic and mix well.

Add the flour and sauté everything together.

Now add a glass of boiling water and stir to prevent lumps. Add the remaining water and mix.

Add tukhmach to the broth, mix well, and cook until done.

Beat the egg with a fork, add the yogurt, and mix thoroughly.

Add a cup of hot broth, stirring well to prevent the egg white and yogurt from curdling. Pour the mixture into the soup, stirring with a wooden spoon.
