
Turkish tomato soup
Description
Perfect for lunch. There are several ways to prepare Turkish tomato soup: you can make it with water or with meat broth, and add cream or milk. In general, you can cook this soup every day using a different recipe each time. Mine is a simple recipe for Turkish tomato soup, yet it turns out delicious with a slight spicy note. Serve with fresh herbs and sour cream.

First, let's prepare the tomatoes and blanch them to remove the skin. To do this, make cuts at the bottom of each tomato, pour boiling water over them, and let them sit for 30 seconds. Then transfer them into cold water. Now the skin can be removed very easily.

Cut the peeled tomatoes into small pieces.

Heat the skillet, pour in vegetable oil, and add flour. Fry over low heat until golden brown.

Next, add tomato paste to the flour, mix well and fry for another 3-4 minutes.

Now it's time to add the chopped tomatoes to the pan, along with garlic, finely chopped or pressed. Stirring constantly, fry everything together for another 5 minutes.

Transfer the contents of the skillet to a pot, add water, and place over medium heat.

Periodically stir the soup and wait for it to boil. Add salt, pepper, reduce the heat, and blend into a puree using a blender.

Leave on low heat for about 5 minutes to simmer. That's it, the Turkish tomato soup is ready. Serve sprinkled with grated hard cheese or with sour cream and fresh herbs. It will be very delicious with croutons.
