Turkish soup
Description
To make the soup thick, we use flour and egg yolks. For the grain, we take round rice. The soup has a pleasant tanginess due to the large amount of lemon juice. The dish has a creamy flavor and a pleasant mint aroma.
Instructions
- 1
Step 1

Prepare the necessary ingredients for making the soup.
- 2
Step 2

Rinse the rice several times with cold water, put it in a pot, pour in two liters of water, and place over heat. After boiling, skim off the foam from the surface and add salt to the liquid.
- 3
Step 3

Cook the rice for about 10 minutes until half-done.
- 4
Step 4

Meanwhile, prepare the other ingredients. Carefully separate the whites from the yolks. You won't need the whites, so place the yolks in a deep container, add flour, and mix.
- 5
Step 5

Add thick Turkish yogurt. Mix thoroughly until smooth.
- 6
Step 6

Pour one glass of water, mix well, distributing the thick yogurt throughout the liquid.
- 7
Step 7

Pour the yogurt mixture into the pot with the rice and cook for 5 minutes.
- 8
Step 8

In a skillet over low heat, melt the butter, add dried mint, and sauté for 2 minutes, stirring constantly. The mint should only absorb the butter and release its aroma.
- 9
Step 9

Put the mint into the soup pot, mix well. Add freshly squeezed lemon juice and salt if necessary.
- 10
Step 10

Bring the soup to a boil, then let it steep, covered, for 10-15 minutes.
