
Turkish soup
Description
The recipe won't take much time. Ezogelin soup is simple and quick to prepare. This dish is not only delicious and filling, but also extremely healthy, as lentils contain plenty of vitamins and minerals. Olive oil can be substituted with regular refined sunflower oil.

Prepare the ingredients for making "Ezogelin" soup.

Pour 3 tablespoons of olive oil into a saucepan and add a piece of butter.

Peel the onion and garlic, wash and finely chop. Place in a saucepan.

Fry for 7-8 minutes, stirring occasionally.

Wash the red lentils, bulgur, and rice and add them to a saucepan. Fry with onions and vegetables for a few minutes, stirring.

Then add 800-900 ml of water. Cover the pot with a lid and cook the grains with onion and garlic for 20-25 minutes.

While the grains are cooking, prepare the dressing for the soup. Pour 2 tablespoons of olive oil into a frying pan and add the flour.

Place the skillet on the stove and, over low heat, stir the butter and flour together until no lumps remain. Add the tomato paste.

Pour 200 ml of water and mix. Add red ground paprika and oregano. Mix well once again.

Lentils with grains, onions, and garlic will be almost ready in 20-25 minutes.

Add the dressing to the soup.

Season the soup with salt and pepper, cook for another 5-7 minutes, then turn off the heat.
