
Turkish lentil soup
Description
The recipe won't take much time. I should mention that my glass holds 250 ml. This soup can be served with croutons. I often serve it with garlic croutons or just small buns. Fresh herbs (parsley, cilantro) are also a nice addition when serving. If you like spicy dishes, you can add more curry or a mix of universal Indian spices.

Place the lentils in a colander and rinse thoroughly.

Sort through it. Transfer to a saucepan, add vegetable broth.

Add peeled and diced potatoes, as well as peeled and finely chopped onion. Also add paprika.

Bring the contents of the pot to a boil, then reduce the heat, cover the pot with a lid (not tightly!), and simmer for 40–45 minutes.

The lentils should become tender. Add salt and pepper to taste.

Pour out 1 cup of soup and set it aside for now. Blend the rest of the pot's contents with a blender until smooth.

Then pour back the cup of soup we had set aside. Mix well, heat slightly over the fire, and serve in portions.
