
Tuscan bean soup with shrimp
Description
The soup is simple and quick to prepare. This classic Tuscan tomato-flavored soup will warm you up in cold weather. Serve the soup hot.

1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, stir and cook for 3-4 minutes.

2. Add tomato paste and stir; cook for about 2 minutes. Add red pepper flakes and dried oregano, stir and cook for another 30 seconds.

3. Pour in the wine and whisk with a whisk. Cook until the liquid is reduced by half.

4. Add the canned tomatoes.

5. Drain and rinse the beans, then add them to the pot.

6. Pour in the chicken broth. Stir and simmer over low heat for 20-25 minutes. Add salt and pepper to taste.

7. Meanwhile, prepare the shrimp. Melt the butter in a small skillet over high heat. Add the shrimp and chopped parsley, cook for about 4 minutes. Season with salt. Set aside.

8. Wash the kale and tear it into pieces. Add to the soup. Add chopped basil and mix. Simmer the soup over low heat for another 5 minutes, adding salt and pepper if needed.
