
Baked tomato soup
Description
A hearty and aromatic soup. Although the entire process will take you about two hours, the active cooking time is minimal. This is an amazingly fragrant and spicy soup based on pre-roasted tomatoes. Its texture and flavor are capable of surprising even the most sophisticated food connoisseurs. In addition to cheese, you can serve the dish with pieces of bread or croutons. By the way, you can bake the soup not only in mugs but also in heatproof bowls or small casseroles. Serve with fresh herbs and sour cream.

1. Wash the tomatoes, dry them, and cut in half. Line a baking sheet with foil and place the tomatoes on it. Sprinkle with salt, spices (to taste), and drizzle with olive oil. Wrap the head of garlic in foil and place it on the baking sheet alongside the tomatoes. Put in a preheated oven at 200 degrees.

2. Bake the tomatoes for about 50-65 minutes. Then transfer them to a blender bowl together with peeled garlic.

3. Blend everything into a smooth puree. Pour into a saucepan with broth and place over heat. After boiling, add salt and spices to taste, and simmer for about 20 minutes over medium heat.

4. Pour the hot soup into cups or other portion-sized heat-resistant containers.

5. Generously sprinkle grated cheese on top. Place the cups on a baking sheet lined with foil and put them in the oven.
