
Tomato soup with mozzarella
Description

Peel the potatoes and cut them into medium-sized cubes.

Pour the broth into a deep saucepan. Place it over heat and bring to a boil. Add the potatoes to the boiling broth and cook for 10 minutes.

Peel the carrots and onion and chop them in your usual way. It doesn't matter whether you grate the carrots or chop them with a knife—in this case, it's not particularly important.

Sauté the onion and carrot until soft. Be careful not to over-fry the onion, so it doesn't give a bitter taste to the broth.

Add tomato paste. Pour in a little water and simmer everything together.
