
Tomato soup with chicken meatballs

Dice the onion, carrots, and celery into small cubes. Melt one tablespoon of butter in the bottom of a medium pot. Add the onion, carrots, celery, and minced garlic. Cook for 5 minutes over medium heat, covered, until the vegetables soften. Add the broth and crushed tomatoes. Bring the soup to a boil.

Now it's time to prepare the meatballs. Soak a slice of dried bread in milk, then mash it with your hands until soft, and add it to the ground meat. Add an egg, season with salt and pepper to taste. Grate the onion on a grater and add it to the meat mixture, along with grated Parmesan and parsley.

Form meatballs and place them into the boiling soup. Then add the pasta and cook until fully done. Season with salt and pepper to taste.
