1. First, prepare all the necessary ingredients. Wash the tomatoes and make small cuts on top.

2. Peel and chop the onion (red onion is best for this tomato soup with cheese recipe) and garlic.

3. Place the tomatoes in a deep bowl or saucepan and pour boiling water over them. Let them sit for a few minutes, then drain the water and let them cool slightly. After that, carefully remove the skins.

4. You can sauté the onion and garlic beforehand or add them directly to the pot. Pour in 1 cup of water and place over heat. Meanwhile, chop the tomatoes.

5. After boiling, add the tomatoes, reduce the heat to medium, and simmer for about 15 minutes.
