
Tomato-carrot soup
Description
The soup is simple and quick to prepare. I'd like to share with you a light vegetable soup that you can mash into a puree before serving (or not, whichever you prefer). You can use either water or broth (vegetable or meat, for example) as a base, if available. Spices are a matter of taste. I recommend adding at least salt and cumin, and then adjust according to your personal preference. You can make the soup spicier or more aromatic. Serve with fresh herbs and sour cream.

1. Wash, dry, peel, and chop the carrots, onion, tomatoes, and garlic.

2. Place the vegetables in a saucepan, pour in water, and set over heat.

3. Cook over medium heat until the carrots are tender (cooking time depends on the size of the pieces).

4. Then send the vegetables together with the water to the blender and grind.

5. Meanwhile, heat vegetable oil in a skillet. Add salt and spices. Fry for just a minute.

6. Transfer to the soup, bring everything to a boil — and then remove from heat. Such a great lunch in less than half an hour.
