Description

The soup is simple and quick to prepare. We'll make the most popular version of Thai shrimp soup "Tom Yum Goong" using a multicooker. The soup can be cooked with chicken or fish broth. Adding coconut milk to the soup is a European variation of this dish. The milk gives the soup a slightly sweet, creamy flavor, and its smooth, velvety texture softens the spicy heat. Serve with herbs and sour cream.

    Prepare the ingredients for the soup. Shiitake mushrooms can be substituted with button mushrooms or oyster mushrooms. If using dried mushrooms, soak them in warm water for 2 hours, or overnight. To enhance the flavor, you can add galangal root, kaffir lime leaves, and lemongrass to the soup.

    First, peel the shrimp, removing the heads and shells. Don't forget to remove the intestinal vein. If you don't have ready-made chicken or fish broth, you can make broth from the shrimp shells and heads. After cooking, the broth should be strained.

    Pour the shrimp broth into the multicooker bowl. Add the chili pepper, previously deseeded. Place the bowl into the multicooker body. Plug in the device. From the menu mode, select the "Soup" program. Bring the soup to a boil.

    To prevent the coconut milk from curdling, it is recommended to add these ingredients to the soup separately when using an acidic environment. In a bowl, mix the tom yum paste, tamarind paste, and lime juice, then dilute the mixture with hot shrimp broth.

    Pour the prepared soup base into the boiling broth. Bring the soup to a boil.

    Squeeze excess moisture from the soaked shiitake mushrooms. Cut the cherry tomatoes in half.

    Pour in the coconut milk and adjust the taste with soy sauce. If you are using raw shrimp, add them to the soup together with the mushrooms at this stage. Cook the Tom Yum for another 2 minutes.

    After 2 minutes, add cherry tomatoes and cooked shrimp to the soup. Turn off the program.

    Tom Yum soup is ready.

    Be sure to cook rice to go with the soup. Place the grain in the pot with water in a 1:1.5 ratio, set the pot into the multicooker. Select the "Grains" program from the menu and press "Start". After 35 minutes, the device will signal that the rice is ready.

    Remove the rice bowl from the device and gently fluff the rice with a fork.

    Pour the "Tom Yum" soup into bowls. Add slices of chili pepper, lime wedges, and cilantro to the soup. Serve rice separately.
