Description
A hearty and aromatic soup. Thai cuisine has no strict rules or limitations—dishes are prepared at the chef's discretion and depend on personal taste. If you can't find the ingredients to make the soup, you can use a ready-made "Tom Yum" soup base. The soup is ready to serve.

Prepare the necessary ingredients. Thaw the frozen shrimp beforehand. For the mushrooms, you can use button mushrooms, shiitake, or oyster mushrooms.

Pre-made "Tom Yum" soup sets can be found in large chain stores.

Peel and devein the shrimp, removing the heads and shells. The heads and shells are used to make the broth. Rinse them under running water, add 1.5 liters of water, and boil for 15 minutes.

Strain the finished broth through a sieve. Discard all shrimp remnants, as they will no longer be needed.

Pound the lemongrass with a mallet so it releases more flavor and aroma into the broth.

Peel the thin skin from the galangal root and slice it into rounds.

Cut the chili pepper in half lengthwise and remove the seeds. If you prefer it spicier, you can leave them in.

Cut the mushrooms and cherry tomatoes in half, or leave them whole if they are small in size.

Add lemongrass stalks, slices of galangal root, kaffir lime leaves, chili pepper, and cilantro stems (reserve the leaves for garnish) to the strained broth. Simmer the broth for another 3–5 minutes. After cooking, remove all these ingredients from the broth, as they are not meant to be eaten. Although some people enjoy the crunchy texture of galangal root.

Add mushrooms, tomatoes, seafood mix, and shrimp to the broth simmering over low heat. Cook for another 2-3 minutes. Instead of salt, adjust the flavor with fish sauce. Add the juice of one lime and chili paste to the soup. Bring the soup to a boil, then remove from heat.

Serve the "Tom Yum Goong" soup sprinkled with coriander leaves. Serve boiled rice separately with the soup.
