
Tom Kha Gai

A hearty and aromatic soup. After returning from Thailand, many of our compatriots start frantically searching for recipes of the local dishes they grew fond of there. In particular, the recipe for tom kha kai soup—a very popular Thai soup made with chicken and coconut milk. Some cook it for themselves, reminiscing about their vacation in Thailand, while others serve it to guests saying, "We've tried the REAL tom kha kai soup." Surprisingly, the recipe is very simple. Tom kha kai soup takes only about half an hour to prepare. Plus, the ingredients are relatively easy to find—today, coconut milk and even lemongrass are available in all major supermarkets. So here's how to make tom kha kai soup. The soup is ready to serve.

In a saucepan, bring the chicken broth to a boil.

Add the coconut milk and bring to a boil again.

When it boils, add a couple of slices of ginger and a couple of pieces of lemongrass.

After 2 minutes, add sliced mushrooms and roughly chopped chicken fillet to the pot. Simmer over medium heat for 10 minutes.

Then add finely chopped chili pepper. Mix well, cook for another 3-4 minutes, then remove from heat and serve.

I don't recommend eating ginger and lemongrass, so it's better to remove them from the pot before serving tom kha kai soup. For extra flavor, you can squeeze a little lemon juice directly into the bowl (optional).
