Description
Perfect for lunch. Tyura is an old Russian dish made of kvass, bread (croutons), and onion—a kind of bread-based okroshka with kvass. Tyura was served cold and eaten immediately; it was not prepared in advance. Only white or light bread kvass was used for tyura, just as for okroshka. The kvass must be fresh. Tyura was considered poor people's food and was an everyday dish in rural households. It can be served with pickled cucumbers; this is a cheap and refreshing dish for hot weather. The dish will be very tasty and aromatic if generously seasoned with herbs such as dill, celery, etc. Serve the soup hot.
