
Warm salad with Jerusalem artichoke

The salad is quick and easy to prepare. Jerusalem artichoke is still an unfamiliar ingredient in our region, which is a pity—this vegetable is not only healthy but also very tasty. It's slightly similar to an artichoke, but in fact it's unique and unlike anything else. Many people have no idea what to cook when they get their hands on Jerusalem artichoke. In such cases, I recommend this simple warm salad. Easy and delicious. The salad is ready to serve.

First, prepare the Jerusalem artichoke. Wash, peel, and cut into wedges, like French fries. Immediately place the cut Jerusalem artichoke into a bowl of water with lemon juice—otherwise the vegetable will turn black.

Arrange the Jerusalem artichokes in a single layer in an ovenproof dish, drizzle with olive oil, add half a cup of water, salt, and pepper. Sprinkle with thyme and bake for about 1 hour at 190 degrees.

In a blender, mix half a cup of olive oil, basil, parsley, and garlic until smooth.

Sauté cherry tomatoes for 3-4 minutes over medium heat, stirring constantly.

Cut the goat cheese into slices and fry in a pan without oil for about 1 minute—more like warming it up than frying.

Place cherry tomatoes, Jerusalem artichoke, and cheese into a salad bowl. Pour over the herb mixture from the blender, mix well, and serve immediately while still warm.
