
Thai soup
Description
Perfect for lunch. Serve hot "Tom Yum" soup sprinkled with finely chopped cilantro. This hot dish will be a great way to diversify a family dinner and an excellent choice for a themed party.

Step 1
Soak shiitake mushrooms in cold water for 2–3 hours (oyster mushrooms do not need soaking), then boil until partially cooked.

Coarsely chop the lemongrass stalks, kaffir lime leaves, and galangal root.

Bring the broth to a boil, add the chicken, lemongrass, galangal, and fish (or soy) sauce. Simmer over low heat for about three minutes, then add the lime leaves.

Add peeled shrimp and chopped shiitake mushrooms to the boiling broth, cook until the shrimp are done, then remove from heat.

Add the juice of one lime, chopped tomato, and sugar. Add the diced and seeded peppers to the soup and let it steep for about five minutes.
