
Thai salad with daikon

A simple dish to prepare. Thai radish salad is real medicine on your plate. Radish is famous for its numerous health benefits, especially when consumed fresh, without any heat treatment. For diabetics, it's a panacea. This salad takes only 10 minutes to prepare and disappears even faster. The ingredient list is minimalist—just daikon, cucumber, fresh herbs (your choice, but they're a must), soy sauce (optional), and oil.

Wash the cucumber and grate it on the coarsest grater, including the skin.

Grate the washed daikon on the same grater.

Mix radish and cucumber together with the juice released during their chopping in a salad bowl.

Now we chop the available herbs not too finely.

The greens should be chopped fairly coarsely; otherwise, we'll end up with a creamy paste instead of a salad.

Add herbs to the salad, dress with soy sauce and sesame oil (in any proportions you prefer), and it's ready! Enjoy immediately :)
