
Thai bulgur salad
Description
A simple dish to prepare. Instead of bulgur, you can use couscous. Prepare the ingredients in advance—you can do it the night before and quickly assemble the salad in the morning. One serving contains healthy vegetables and grains, everything you need for good digestion. Serve chilled.

1. Cook the bulgur until done, then let it cool for 2 hours, or you can leave it overnight. Use a fork to mash it, making sure there are no large lumps.

2. Thinly shred the cabbage, thinly slice the carrots (a Korean-style carrot grater works well here). Finely chop the cucumber, mince the cilantro and peanuts. Add all the vegetables and nuts to the bulgur.

3. Dress the salad with sesame oil and wine vinegar, add chili flakes, salt, and grated ginger, then mix well.

4. Serve the salad immediately or refrigerate it.
