
Thai chicken soup with rice
Description
Perfect for lunch. This light chicken broth soup with rice, celery, mushrooms, and tomatoes will delight you with its rich flavor. Lime juice adds a tangy, spicy note. The soup is ready to serve.

1. Coarsely chop the onion and mushrooms. Press the garlic. Cut the celery. Finely chop the cilantro. Pour olive oil into the bottom of a large pot. Add chicken breasts, chopped onion, garlic, celery, salt, and 7 cups of water.

2. Bring to a boil, then reduce the heat. Simmer for 20 minutes, until the chicken breasts are fully cooked. Add cherry tomatoes, mushrooms, red pepper flakes, cilantro, and lime juice. Cook for another 10 minutes.

3. In a separate saucepan, add rice, 2 cups of water, and a pinch of salt. Bring to a boil, then cover with a lid and reduce heat to low.

4. Boil for about 10 minutes, then place 2 coriander sprigs on the water surface, cover with a lid, and boil for another 4 minutes.
