
Raw food gazpacho
Description
Gazpacho is one of my favorite raw food soups. I'm not actually a raw foodist, but there are a few raw dishes I really enjoy purely for their taste, and gazpacho is definitely one of them. No cooking, no long hours in the kitchen—just a delicious, vitamin-rich, healthy soup ready in your bowl. Essentially, gazpacho is a vegetable salad turned into a purée. But there are a few tricks to preparing it that I'd like to share with you :) Serve the soup cold.

First, cut the tomatoes into small, irregular pieces.

Add the chopped tomatoes to the blender or food processor bowl.

Peel the cucumbers.

Finely chop one and a half cucumbers, set aside the remaining half cucumber for now.

Peel and cut the red onion into small pieces.

Add the minced onion and cucumbers, as well as the peeled garlic cloves, to the tomatoes in the blender container.

Then add about one and a half cups of tomato juice to the vegetables (if using paste, slightly dilute it with water).

Grind all the contents of the blender bowl until smooth.

We don't need a perfectly smooth mixture—even if there are still some tomato seeds left, it's not a problem. The main thing is a liquid consistency and the absence of large vegetable pieces.

Pour the contents of the blender jar into a separate container. Add the remaining tomato juice, vinegar (as far as I know, vinegar does not contradict raw food principles), salt, and pepper.

Serve immediately, adding finely chopped cucumber and red onion directly to the plate.
