
Mushroom and Cheese Soup with Oyster Mushrooms

Hearty and aromatic soup. Here is a simple recipe for cheese soup with oyster mushrooms. I've been using this recipe for several years now, and my family absolutely loves this soup. We freeze plenty of oyster mushrooms every year and make this soup about once a month throughout the year. It's especially delicious in winter. I highly recommend you try it! Cheese soup with oyster mushrooms recipe: 1. Sauté oyster mushrooms in vegetable oil until excess liquid evaporates. 2. Peel onions and carrots, finely chop, and sauté until golden brown. Add to the mushrooms. You can also diversify the classic recipe by adding other vegetables to the sauté (for example, celery or bell pepper). 3. Meanwhile, place the broth on the stove and bring to a boil. 4. Add the sautéed ingredients to the boiling broth. Reduce heat and simmer for 3–4 minutes. 5. Meanwhile, wash and peel potatoes. Cut into thin strips and add to the broth. 6. Cook over medium heat until potatoes are tender. 7. Chop the processed cheese into small pieces and gradually add to the broth, stirring constantly.
