
Cheese soup with chicken gizzards
Description
The cheese soup becomes thick due to the cheese, so be sure to stir it while cooking or reheating to prevent it from burning on the bottom. You can substitute the processed cheese slices with any soft melting cheese and add any vegetables to the soup, such as bell pepper or tomato. Ladle into bowls and serve.

Prepare all the necessary ingredients for making cheese soup with chicken gizzards.

Cut the chicken gizzards into 2-3 pieces, rinse and place them in a heavy-bottomed pot. Pour water over the gizzards and bring to a boil over medium heat. Drain the first water from the pot, rinse the gizzards and cover with cold water. Place over medium heat and cook for about one hour, until the gizzards are tender.

Pour vegetable oil into a frying pan and heat over medium heat. Add finely chopped onion and grated carrot (using a medium grater). Fry for 7 minutes, stirring occasionally.

Peel the potatoes and cut them into strips, then add to the pot with the cooked gizzards.

Season everything with salt, add the sautéed carrots and onions, and cook for 15–20 minutes, until the potatoes are done.

Grate the processed cheese on a medium grater and add it to the pot with the soup. Cook the soup, stirring, until the cheese is completely dissolved. Add chopped herbs to the pot, remove from heat, and serve.
