
Cheese soup with broccoli

A hearty first course. Cheese soup is a dish where cheese is the main ingredient. Melted cheese gives the soup its unique flavor. Parmesan, cheddar, or Swiss cheese are most commonly used. Before melting, the cheese is cut into small pieces or grated. You can add small amounts of various vegetables to the cheese soup—celery, carrots, potatoes, and onions work particularly well. You can also try making cheese soup with mushrooms, or experiment with the liquid base—cheese can be melted in meat or vegetable broth. Serve the soup hot.

First, prepare the broccoli. To do this, cook the frozen vegetables over low heat until done. Boil for no more than 15 minutes, until the broccoli becomes tender.

In a separate saucepan, mix 4 cups of water and 4 chicken bouillon cubes. Simmer over low heat until the cubes are completely dissolved.

Finely chop 0.75 of a medium onion and add to the chicken broth.

Add 1/2 teaspoon garlic powder to the broth.

Dice the Philadelphia cheese and add it to the broth. Make sure the soup does not boil—it should simmer over low heat.

Cool down the boiled broccoli and chop finely.

When the Philadelphia cheese dissolves in the broth, add the chopped broccoli to the pot. Stir and continue simmering the soup over low heat.
