Wash the potatoes. Wrap them unpeeled in foil and bake at 180 degrees for one hour.

When the potato is baked, let it cool for a little while.

Finely chop the shallot, red onion, and jalapeño pepper. Pour vegetable oil into a deep saucepan and sauté the chopped vegetables until soft.

Pour water over the vegetables. Add grated cheddar cheese. Season with salt and pepper to taste.

Bring the soup to a boil. Then add the sliced baked potato.
