Today, I'll share with you a simple recipe for preparing "syrbushka," a traditional Moldovan soup originally made for shepherds. It has an amazing, unique flavor unlike anything else, thanks to one of its main ingredients—whey, which gives the soup its distinctive taste. Otherwise, preparing this soup is very easy, and now I'll tell you how to make syrbushka—an unusual and incredibly delicious soup. Serve with fresh herbs and sour cream.

Step 1

First, we need to prepare a vegetable broth. For this, we put one onion, a carrot, a parsley root, and black peppercorns into a saucepan. Place the saucepan over low heat and simmer for 30-50 minutes after boiling. After this time, remove the vegetables and strain the broth.

Place the broth back on the heat and add chopped onion cut into small cubes.

After about 5 minutes, add the potato slices and cook until fully done.

Then we pour a little broth into a cup, and when it cools down a bit, we mix cornstarch into it.

Once the potatoes are cooked, we add to the soup the sour milk and diluted corn flour. Place it over heat, and when the liquid comes to a boil, add the chopped herbs and ground coriander, season with salt, stir, and remove the soup from heat.
