
Shabu-shabu
Description
Perfect for lunch. This dish is a soup in the way we usually understand it, yet it can confidently be served not only for lunch but also for dinner. There are many variations. Serve the soup hot.

1. The beef should be sliced very thinly, almost paper-thin. This can only be done with slightly frozen meat. Combine kombu seaweed with water in a large pot and place over heat.

2. You can buy sesame sauce if you're lucky enough to find it in a store, or you can prepare it yourself. To make it, combine 1/3 cup each of soy sauce, sugar, and vinegar with half a cup of water. Add one cup of roasted sesame seeds ground in a blender, a little sesame oil, salt, and miso paste. Mix well and store the sauce in the refrigerator until ready to serve.

3. Prepare all the vegetables, herbs, and tofu. Add to the boiling water together with the meat.

4. Simmer for a short time (5-6 minutes) until done, then serve immediately.
