Probably everyone already knows that beets have laxative properties, but not everyone realizes how beneficial they are for our body. First of all, beets contain many vitamins (A, E, C, B), amino acids, and mineral salts. They also help combat weakness and have a positive effect on the gastrointestinal tract. Considering that beets hardly lose their beneficial properties after heat treatment, they become the number one vegetable for a healthy body. Cut the potatoes and onion into small cubes, grate the apple on a coarse grater. Transfer the chopped vegetables and apple to a deep pot.

Now we need to pour water into the pot so that the liquid rises several millimeters above the vegetables. Place the pot on the stove and bring to a boil, then simmer over medium heat for 10 minutes.

While the vegetables are boiling, we peel the beetroot and cut it into small strips.

Transfer the beet to the pot with the other ingredients, pour in hot vegetable broth, add thyme, cumin, and lemon juice. Cover the pot with a lid and simmer over low heat for 15–20 minutes.

Then turn off the heat, add 2 bay leaves to the pot, and cover with a lid. Let it steep for about 15 minutes.

Remove the bay leaf from the pot, then separate the vegetables and the broth. Now we need to puree the vegetables, and the easiest way to do this is with a blender.

Combine the vegetable purée with the broth, add salt and pepper, and mix well. Place back on the heat and cook for no more than 7-8 minutes. Our dietary soup is ready and can be poured into bowls. Serve with sour cream and garnish with fresh herbs. However, those who strictly monitor their figure can omit the sour cream.
