
Beet salad with tangerines
Description
If you want to try something truly original and previously unexplored, beet salad with mandarins is just what you need. And most importantly, no exotic ingredients—everything is very simple and easily available, yet the taste of the finished dish makes you reconsider your entire approach to salad preparation.

We thoroughly wash the beetroot and separate the roots from the greens.

Steam the beets until tender (40–60 minutes, depending on the size of the beets).

When the beet is soft, remove it from the pot and let it cool.

When the beet cools down, peel off its skin. Cut the peeled beet into thin strips or slices.

Thoroughly wash the beet greens and cut them into pieces about 3 cm in size.

We put the beet greens into boiling salted water and cook for about 3 minutes.

Then drain the greens in a colander and rinse with ice water.

Squeeze the juice from one tangerine.

Mix the tangerine juice, honey, vinegar, olive oil, salt, and pepper. If desired, add some chopped herbs as well.

Peel the remaining tangerines and separate them into segments. In a salad bowl, mix the beet greens (squeezed dry), beets, tangerine segments, and sauce.
