
Beet salad with garlic and nuts

I don't know about you, but I really love beet salads and make them quite often. The main ingredient—beets—can be combined with many other vegetables, and each time you'll get a new, interesting salad. Now let me tell you,

Step 1

Prepare the salad ingredients. Boil the beet in advance, let it cool and peel. I make the salad in two versions - with mayonnaise and with olive oil (my daughter eats it without mayonnaise).

Grate the beet on a coarse or medium grater.

Peel the garlic. You can chop the nuts with a knife, but I prefer crushing them with a rolling pin, as this releases the aromatic oil from the nuts and makes them softer.

Add the chopped nuts and garlic, salt, and black pepper to the beetroot.

And mix thoroughly.

Now I divide the salad into two portions: one I'll make with mayonnaise, and into the second part I'll add olive oil and lemon juice.

You can serve the salad immediately or let it steep for a while. Garnish the salad to your taste and preference.
