
Lithuanian-style beet soup
Description
Hearty and aromatic soup. I've given you the classic Lithuanian-style borscht recipe. Sometimes I make it with kefir, diluted slightly with boiled water. But in Lithuanian-style borscht, you should always add plenty of sour cream and generously sprinkle with dill. Usually in Lithuania, hot boiled potatoes are served with borscht, making it more filling and delicious.

Here are the ingredients we will need to prepare the borscht.

Wash the beetroot and boil until tender. Then peel and grate. You can use canned beetroot, but fresh is much tastier.

Boil the eggs and peel them. Separate the whites from the yolks. Finely chop the green onions. Mix the yolks and onions in a bowl and season with salt to taste. The salt also eliminates the onion odor.

Peel the cucumber and cut into small pieces.

In a bowl, combine all the prepared ingredients. Chop the egg white. Pour buttermilk over everything and add sour cream. Add salt if needed. Refrigerate the borscht for at least an hour. Before serving, generously sprinkle with dill. Ready!
