
Beet soup
Description
The soup is usually prepared with vegetable broth, but it can also be made with meat broth. Borscht is best served hot, with warm boiled potatoes and sour cream. Pay close attention: serve the soup hot.

1. First, prepare all the necessary ingredients for the soup.

2. Finely chop the peeled onion into small cubes.

3. Transfer it to a saucepan with a double bottom, pour in the oil, and sauté the onion until translucent.

4. Cut the peeled vegetables (beets and potatoes) into julienne strips. The potatoes can be slightly thicker, the beets slightly thinner, so that the beets have time to cook through. Finely chop the garlic with a knife.

5. Add the beet and garlic to the fried onion, sauté for a minute, no longer.

6. Add the potatoes, mix well, and fry for a couple more minutes.

8. Now pour in the water, add bay leaf, salt, pepper, and simmer the soup for 30 minutes. Add the fresh herbs 2 minutes before the end of cooking.
