
Fresh zucchini salad
Description
A simple dish to prepare. This salad is perfect for a hot day, as the rather watery zucchini will hydrate your body and leave you feeling refreshed. The special feature of this salad is the way the zucchini is cut—it resembles green noodles in the finished dish. The dressing turns out deliciously sweet thanks to the honey, and aromatic from the dried herbs (I personally use coriander, but you can substitute it). I recommend serving this salad with cherry tomatoes and fresh herbs, as it looks absolutely stunning. Serve chilled.

1. First, prepare the sauce. Add a few tablespoons of olive oil, lemon juice, finely chopped garlic, cilantro or other herbs, and salt to the honey. Mix thoroughly. The sauce is ready.

2. Peel the zucchini and use a vegetable peeler to slice it into thin, long strips. Then cut these strips into spaghetti-like strands using a knife.

3. Add the sauce to the salad and let the salad marinate for 5-10 minutes. Then halve the cherry tomatoes and finely chop the herbs.

4. Serve the salad, garnished with cherry tomatoes, roasted sunflower seeds or sesame seeds, and fresh herbs.
