Description

The soup is easy and quick to prepare. Making cabbage soup is simple and straightforward; the key is to thoroughly cook the meat or poultry so that the flesh easily separates from the bones. Use fresh, juicy, and appetizing cabbage. Be sure to add tomato paste, tomato sauce, or juice—it will give the dish a vibrant color. You can also add dried garlic or other spices and seasonings at the very end. Serve the cabbage soup hot with bread, garlic rolls, croutons, etc. Serve the soup hot.

Instructions

  1. 1

    Step 1

    Step 1

Prepare the listed ingredients. Peel the carrots and potatoes, then rinse them in water along with the green onions. Instead of green onions, you can use onion.

  2. 2

    Step 2

    Step 2

Rinse the chicken pieces or replace them with meat: beef, pork, or lamb on the bone. Place in a pot or cauldron, pour in hot water, and bring to a boil on the stove. Remove the foam that forms, reduce the heat, and simmer over medium heat for about 1 hour, covering the container loosely with a lid.

    Step 3

When the chicken is fully cooked, remove it from the broth and let it cool slightly.

  4. 4

    Step 4

Grate the carrot on a coarse grater, and cut the potato into medium cubes. You can slice the carrot into strips or rounds — as desired.

Add to the broth and simmer over medium heat for 15 minutes. If cooking with onion, chop it into small cubes and add together with the carrots.

    Step 6

Shred the cabbage into strips, remove the meat from the bones and slice it or tear it by hand.

  7. 7

    Step 7

    Step 7

Add both types of cabbage to the pot 5-8 minutes before the cabbage soup is finished cooking. Use fresh cabbage, although it can be replaced with sauerkraut (soaked in water to remove salt).

  8. 8

    Step 8

    Step 8

Spread the tomato sauce, add the prepared seasoning and salt, bay leaves. Add other spices if desired.

  9. 9

    Step 9

    Step 9

Chop the green onion or any other herb of your choice and add it to the shchi. Simmer for another 2-3 minutes, then turn off the heat. If you like a garlic flavor, add a finely chopped garlic clove, previously peeled and rinsed.

Pour the colorful fresh shchi into deep plates and serve hot with bread, sour cream, mayonnaise, etc. Enjoy your meal!
