Description
A hearty first course dish. The soup got its name in honor of the French king's favorite, who invented its recipe. It is believed that cauliflower improves skin tone and is very beneficial for the body. Leek is used in the original recipe, but it can be perfectly substituted with the white part of regular green onions. If desired, you can set aside a few cauliflower florets and boil them separately to use as a garnish. The soup is ready to serve.

Prepare all the necessary ingredients for making Velouté Dubarry soup. Wash and dry the vegetables.

Slice the leek into half-rings and place in a heavy-bottomed pot. Add butter and set over medium heat. Let the butter melt and cook the leek for 3 minutes, stirring.

Add the flour to the leek and onion, stir, and fry for another 3 minutes.

Slowly pour the broth into the saucepan, stirring constantly. Add the cauliflower florets to the soup.

Bring everything to a boil, reduce the heat, and simmer for 30 minutes. Puree the finished soup with a blender until smooth.

Mix the cream and egg yolk until smooth.

Constantly stirring the soup, pour in the creamy mixture. Season everything with salt, bring to a boil, then remove from heat. Pour the ready "Velouté Dubarry" soup into bowls, garnish and serve.
