
Soup
Description
The recipe won't take much time. It's best to cook this soup in a cast-iron cauldron, but a thick-bottomed pot will work too. You can make the soup with any meat, but it tastes best with beef or lamb. If you prefer a thicker soup, remove some of the cooked potatoes, mash them, and return them back to the soup. Adjust the amount of spices, chili, and garlic to your taste. If the soup tastes too sour, add a little sugar to balance the acidity.

Prepare all the necessary ingredients for making "Sous" soup. Wash the meat and dry it. Wash the vegetables and herbs, dry them, and peel if necessary.

Pour vegetable oil into a cauldron, heat over high heat, add the pieces of meat and sear on both sides until a golden crust forms.

Reduce the heat to medium and add one peeled whole onion to the meat. Slice the carrots into half-rings and add them to the pot.

Pour water into a cauldron and bring to a boil. Reduce the heat and simmer for 60–80 minutes, until the meat is tender. Remove the lamb and separate the meat from the bones, then cut it into pieces. Remove the boiled onion, as it will no longer be needed.

Cut the peeled potatoes into large pieces and place them in a cauldron.

Add half of the chopped herbs to the potatoes and return the boiled meat. Season everything with salt and cook for 15–25 minutes, until the potatoes are done.

While the potatoes are boiling, prepare the sauté. Place the clarified butter in a frying pan and melt it. Add the second chopped onion, bell pepper cut into strips, and tomato purée. Add the spices and sauté the vegetables for 7 minutes over medium heat, stirring occasionally.

Place the vegetable mixture into the pot with the soup, stir, and bring to a boil.

Add the remaining greens, minced garlic, and chili pepper to the soup and mix well. Bring the soup to a boil, then remove from heat. Cover the pot with a lid, let it stand for 10 minutes, and serve.
