
Pork and cheese soup

Wash a piece of lean pork (you can use shoulder or rear part) and dry it with paper towels. Remove the membranes from the pork and cut into small pieces. Place in a pot, add water to cover, and put on the stove.

While the meat is boiling on the stove, prepare the vegetables for your soup. Peel the potatoes and wash them thoroughly. Cut them into small, evenly sized pieces and add to the meat, which by this time should be half-cooked.

Peel the onion and chop it finely into small cubes. Peel the garlic and slice it into thin rounds. If you don't like garlic pieces floating in your soup, you can grate it on a fine grater or press it through a garlic press. Add the vegetables to the soup and cook for fifteen minutes.

Grate the hard cheese on a grater. You can use any variety. For example, semi-hard cheese varieties melt very well.

A few minutes before the soup is ready, season it with salt and pepper to taste. Add the grated cheese to the soup and stir. Turn off the heat, cover with a lid, and let the soup steep. Serve sprinkled with fresh herbs.
