
Pork and mushroom soup
Description
A hearty first course. Take a closer look at this recipe that shows how to delight your loved ones with a fragrant pork and mushroom soup without spending too much. Besides the two main ingredients, the soup includes several types of vegetables. If, for some reason, you don't like cooked sweet pepper, you can replace it with paprika powder. The soup will then have a brighter color. Add fresh herbs when serving.

1. Wash the pork tenderloin and cut it into pieces.

2. Prepare the vegetables for the sauce. Wash and peel the onion, carrot, and celery root. Cut all the vegetables into small cubes. Chop the sweet bell pepper. Blanch the tomatoes with boiling water, remove their skins, and cut the tomatoes into small pieces. Rinse the mushrooms and slice them lengthwise. Peel and cut the potatoes into small cubes.

3. Use a deep frying pan. Add pork pieces to the heated vegetable oil. Sear over high heat, stirring constantly, until browned. Add onion, celery root, and carrots to the pork. Mix well. Add mushrooms to the sauté. Stir again. Cook for 3–5 minutes. Then add tomatoes and bell pepper. Stir and cook for no more than 10 minutes.

4. Boil the potatoes by placing them in boiling water (1.5 – 2 liters). When the potatoes are half-cooked, add all the sautéed mixture together with the pork. After the soup comes to a boil, reduce the heat. Add salt, dried herbs, and spices (to taste). Cook until fully done.
