Rinse the piece of meat with water and clean it. Place it in a suitable pot and cover with clean cold drinking water. Bring to a boil and reduce the heat. Add one peeled onion, cloves, and a bay leaf. Simmer for an hour and a half, skimming off the foam periodically.

Strain the ready broth, return it to the heat, and set the meat aside. Peel, wash, and dice the potatoes. Add them to the boiling broth.

Once the meat has cooled slightly, remove the bones and shred it into fibers. Place it in the broth and bring the soup to a boil.

Slice the second onion and place it on a heated pan with vegetable oil. Sprinkle with sugar and caramelize. Pour in the wine, wait for the alcohol to evaporate. Add tomato and basil, cook for a few minutes.

Add buckwheat to the soup, which should preferably be rinsed beforehand. If you don't have green buckwheat on hand, use regular buckwheat—it won't spoil the soup's taste.
