
Pea soup with fresh peas
Description
Hearty and aromatic soup. So, what makes this soup so great, and why do I highly recommend you make it? First, it takes very little time to prepare—just about 15 minutes. Second, it's a healthy, filling, and quick snack. Third, the soup is suitable for any season: even if you don't have fresh green peas on hand, you can always buy them frozen at the nearest store.

Step 1
In a saucepan, heat the oil. Add sliced leek and regular onion (slice both parts of the leek: green and white). Cook over medium-low heat until softened (5-10 minutes).

Add the chicken broth. Increase the heat and bring the contents of the pot to a boil.

Add the peas. Cook for 3 to 5 minutes, until the peas are tender. If using frozen peas, cook for less time; 3 minutes will be enough.

Now remove from heat, season with salt and pepper. Puree the soup using a blender. Just before serving, add crème fraîche (or sour cream, or cream) and chopped chives to each portion (you can substitute chives with any other herb you prefer).
