Asparagus soup
Description
A hearty first course. The recipe for asparagus soup is very simple and quick, yet at the same time unusual. This is a great way to fall in love with this healthy vegetable, as essentially, there's nothing in it besides asparagus. The soup turns out light, summery, and very original. 1. Heat a spoonful of vegetable oil in a saucepan (if you're worried about sticking, you can increase the amount of oil). 2. Once the oil is hot, add the asparagus stalks and sauté for a few minutes. 3. Meanwhile, heat chicken broth on the stove, and once it boils, pour it over the asparagus. 4. Reduce the heat, season with salt and pepper, and optionally add herbs or other vegetables to taste. Cook until it comes to a boil again. 5. Now the soup is almost ready. To make it look even more elegant, blend it in a blender until smooth. Serve each portion with a spoonful of sour cream and garnish with fresh herbs or leftover asparagus pieces. I also recommend adding croutons to this asparagus soup recipe—they turn it into a restaurant-quality dish. If you'd like to make this healthy soup appealing even to the little ones, finely dice some bell pepper and carrot and cook them separately—this will make the soup literally burst with color. Serve with fresh herbs and sour cream.
