
Spinach and orzo soup
Description
Hearty and aromatic soup. This nutritious creamy vegetarian soup combines a variety of flavors. Grated Parmesan cheese perfectly complements the dish. If desired, you can also add 1-2 cups of cooked chicken to the soup. You can also use chopped frozen spinach—just make sure it's thawed and all excess water is squeezed out. Serve the soup hot.

1. Finely chop the onion and mince the garlic. Heat olive oil in a large pot. Add the onion and garlic and sauté for 3-4 minutes, until fragrant.

2. Add lemon zest, red pepper flakes, and dried thyme. Cook for another 3 minutes, until the onion becomes tender and translucent.

3. Reduce the heat to medium and add the spinach and orzo pasta.

4. Cook for 1 minute, then add broth and lemon juice. Bring to a boil and simmer for 12–15 minutes, until the pasta is almost done.

5. Whisk 2 tablespoons of water and cornstarch in a small bowl. Add the mixture to the slightly boiling soup and stir quickly. Cook for about 3 minutes, until the soup thickens.

6. Serve immediately, sprinkled with freshly grated Parmesan.
