
Lamb soup
Description

Shurpa is a traditional Uzbek dish, but it's popular not only in its homeland but also in other regions. Many home cooks have come to love this soup and prepare it successfully. Pour water over the meat in a pot. Use not too much water. Place on the stove.

After the meat comes to a boil, skim off the foam. Add the carrot, onion, and garlic, unpeeled, to the pot.

Boil for about two hours. It may take longer if the lamb is older.

When the meat is cooked, remove it, separate it from the bone, and cut it into pieces.

Take out the carrot and slice it into rounds.

Boil the onion until cooked. Remove the onion and garlic, peel and pass through a sieve. Return this mixture back to the broth.

Cut the bell pepper into half-rings and also add it to the soup.

Cut the potatoes into large cubes and add them to the broth. Cook until half done.

Towards the end of cooking, add the chopped onion, tomato cut into large pieces, and tomato paste.

Add spices, salt, pepper, and turn off the heat.
