Prepare the ingredients. You can cook shchi using fresh cabbage or fermented cabbage—the taste will be drastically different. I cook it with fresh cabbage in summer and with sour cabbage in winter. So, first prepare a broth using water and half a chicken, and we'll use this broth to cook the shchi.

Peel the vegetables and rinse them under water. Cut them into random pieces. Add to boiling broth.

Shred the cabbage, add it to the broth with the meat and vegetables.

Add bay leaf, peppercorns, salt, a pinch of ground pepper to the same pot and cook until all the vegetables are tender.

Heat the vegetable oil and fry the flour in it until it turns a creamy color.

Pour the hot broth into the flour mixture in a thin stream, stirring constantly, until a thick, homogeneous mixture forms. Transfer this mixture into the soup.

Simmer the soup with the seasoning for a minute, add fresh herbs, and remove from heat. The shchi is ready!

Make cuts in the bread rolls to remove all the crumb. Place them in the oven for 15 minutes at 170 degrees to dry out. This procedure will prevent the rolls from getting soggy immediately. Pour the meat soup into the bread bowls and serve.
